A few weeks ago I had the happy experience of meeting Amber Spiegel, owner/baker of SweetAmbs. Amber's bakeshop is in the same town where I live, and I happen to pass it everyday. I had wanted to stop by her shop for months to say hello, but didn't want to disrupt her busy baking schedule. I knew I just had to meet her after following her blog and Facebook posts, so I contacted Amber and we set up a time for my visit. When I entered her tiny bakeshop, I noticed a bakers rack with dozens of beautiful cookies. Not only are her cookies gorgeous, but they are like little pieces of art. During my visit, Amber was nice enough to give me one of her cookies to sample....a cute, nautical cookie which I couldn't wait to get home to eat. And, yes, just as I thought, Amber's cookie was as delicious as it was beautiful! Flavored with cardamon, orange zest and vanilla bean, it was perfectly decorated with royal icing. The cookie was slightly chewy inside with a bit of a crisp edge, and not overly sweet...just the way I like my cookies.
